Rowan berry syrup is a unique ingredient that perfectly connects sweet and slightly tart taste, which is typical of the autumn season.

Syrup from black and red rowan berries is a great base for preparation of refreshing hot and cold drinks, but its sweet-bitter taste is perfect also for sweet meals, which will pleasantly refresh you.

Tender rowan berry tartalettes - delicious connection of puff pastry and refreshing taste of rowan berry syrup.

Dough

  • 300g of plain flour
  • 2 egg yolks
  • 150g of butter
  • 70g of sugar

Cream

  • 250g of mascarpone
  • 250g of soft curd cheese
  • 190g of fromage frais
  • Rowan berry syrup

Mix the ingredients and make a firm dough. Put the dough into the moulds and bake it at 180 degrees for ca 25 minutes. After cooling, mix cream and sweeten with syrup. 

Fill the tartalettes with the cream and embellish with fruit.

Authentic Rowan Berry Ice Cream

Try an original recipe for ice cream with rowan berry syrup by our developer Lenka.

Our developer Lenka came up with a recipe for delicious home-made ice cream from rowan berry syrup.
  • 250g of fat curd cheese
  • 200ml of 33% cream
  • Vanilla sugar
  • Honey by taste
  • Rowan berry by taste
  • Fruit for decoration

Whip cream and gradually add other ingredients. Sweeten it with honey by taste and flavour with rowan berry syrup. Pour the mixture into prepared ice lolly moulds or bowls and leave it to freeze overnight. 

Embellish the ice cream with rowan berry syrup or fruit before serving.

Recipes for (Non)Alcoholic Drinks with Rowan Berry Syrup

Home-Made Rowan Berry Lemonade

Pour chilled sparkling water over fruit syrup (ideally 1:10), add ice and slices of lemon and apple. Perfect refreshing lemonade sees the light of day!

Hot Rowan Berry

Our tip: Add 5 cl of rum or gin and warm yourself up.
  • Pour syrup at the bottom of your favourite cup (ideally 1:8, i.e. 1 portion of syrup per 8 portions of water)
  • Add cinnamon, cubes of apples and a slice of organic lemon
  • Pour hot water (80 °C) or hot black tea over it

Perfect lemonade sees the light of day! Enjoy every warming gulp. 

Rowan Berry Gin & Tonic

You will fall in love with this unusual combination in 18+ version not only in autumn.
  • 50ml of gin
  • 20ml of rowan berry syrup
  • 150ml of tonic
  • Ice
  • Slice of lemon or lime for decoration
  • A few fresh rowan berries for decoration (optional)
  • Thyme or rosemary for decoration (optional)
     

Put ice into a glass, add gin and rowan berry syrup. Mix gently to blend syrup and gin, add tonic and stir slightly. Embellish it with a slice of lemon or lime, add a couple of fresh rowan berries, or thyme or rosemary for more intense aroma.
